NSF certification of food equipment involves a review of the product to ensure it meets voluntary American national standards for design, construction and cleanability. This type of testing is normally required if the product will be used in restaurants and other facilities that will be subject to public health inspections. If the cookware set is certified by NSF (it should be listed on our web site at www.nsf.org/certified/food), then the materials used on the interior surface would be considered acceptable for direct contact with food. Coatings also undergo abrasion testing on new cookware products to ensure they will not flake off and adulterate food.
